Golden Milk Chia Pudding!

 Wake up at 5 AM to make coffee. Sit on the couch and drink it sleepily. Watch the steam rise. Listen to the birds outside chirp and twitter. Pull on some yoga pants, a sports bra and that loose black muscle shirt with the huge arm-holes. Slide into your sandals and grab your yoga mat. Head out the door and walk into town to do an hour and a half of mysore-style ashtanga yoga with your new teacher and sweat so much that you look like you just got in a fight with garden hose.

Buy a kombucha and walk home. Start your day with writing and planning and recipe testing and then go to the grocery and buy all the rhubarb you can find and then come home and make yourself chia pudding because wait you don’t actually have enough time to eat a legit meal and also get all of your projects done.

That’s ok because you’re making Golden Milk Chia Pudding and layering it with tons of fruit! And it makes you smile a big cheesy grin all by yourself in your kitchen. It tastes like a coconut chai latte with that orange-blossom flavor from the turmeric.

You think to yourself if I don’t post this recipe soon I bet somebody else is going to beat me to it. And then you check Pinterest and so many people have almost done this same recipe because Golden Milk is having a moment. But nobody has done a chia pudding and definitely not the way you do it. Oh and then make a video about it because that’s a thing you do now!

In other news, I have adopted more plants! I’m a legit plant mom. In lieu of being able to have a cat because I’m allergic, I’ve gone sort of overboard with houseplants. Maybe it just feels that way because our house is so small and I’m currently using our guest room as storage for chocolate packaging and lighting gear? Anyway, I bought a gardenia plant and put it on our newly installed half-circle side tables (Logan’s dad made them for us!).

This Golden Milk Chia Pudding recipe is easy, creamy and sweet. Warmly spiced with cinnamon, turmeric, black pepper and vanilla. It's sweetened with maple syrup  and made with full fat coconut milk. It's SO GOOD.

I like eating it straight and layering it in fruit parfaits with coconut flakes and passionfruit. But it's also great folded into a fruit salad with papaya and a squeeze of lime. Seriously heavenly!

Golden Milk Chia Pudding (Vegan)

Creamy, nourishing chia pudding meets Golden Milk! I love eating this as-is, but it’s also awesome paired with tropical fruit like banana, mango, papaya… the works!

Ingredients

  • 1/4 cup chia seeds
  • 3/4 cup full fat coconut milk (shaken, at room temp)
  • 1/8 cup maple syrup
  • 1/2 teaspoon turmeric + more to your liking
  • 1/4 teaspoon ground cinnamon
  • couple cracks black pepper
  • 1 teaspoon vanilla extract
  • 1 inch fresh ginger

Instructions

  1. In a medium bowl, stir together the chia, coconut milk, maple syrup, turmeric, cinnamon, black pepper, vanilla and ginger. Set aside for 15 minutes to hydrate. Done!
  2. For parfaits, layer the chia pudding and fruit to your liking. I personally like banana, mango, dates, coconut and passionfruit.
