It's a gorgeous Sunday here in Charlottesville. And it's been an eventful week. We're inches from closing on our mortgage, which is both exciting and stressful.

Logan just sold loads of cold-brew coffee at Camp Barefoot last weekend.

I played a pre-LOCKN festival show with Larkspur in a big field out in Nelson County last Wednesday.

And I shot another live Nom cast on Friday morning.

This weekend has really been all about relaxing enough that we can get back to normal. So Logan and I spent a good slice of Friday afternoon looking for a swimming spot that wasn't closed or freezing cold (but could only find an icy spot to dangle our feet). We made up for it by stuffing ourselves to the gills with sushi and going to see Don't Think Twice.

Saturday I taught my yoga classes and then we jetted off to Richmond for a picnic in the park with friends, followed by some free Opera in Byrd Park. We're all feeling very cultured now, despite mostly just chatting in giggly whispers throughout the whole thing.

And here we are. Sunday. Logan and I are taking the day to clean and re-set and generally figure out how we're going to manage our home-life with both of us being so busy making cool shit happen.

To power our reset-fest, I made this dragon fruit smoothie bowl this morning (for the third day in a row). I made it on my Nom cast this past Friday too. As you can see from the video (watch the replay of the live show here) it's wicked easy!

Dragon fruit is a tropical fruit that looks a lot like a dragons egg. It grows on a tall cactus species and is originally from Mexico.

It's juicy, refreshing and mildly sweet. Flavor-wise it's very similar to prickly pear. It's sort of like a cross between cucumber, pear and ripe cantaloupe. I also get a bit of a black-pepper aftertaste when it's really fresh and ripe.

The color of dragon fruit is just mind blowing! It's a magenta explosion!

Eating dragon fruit smoothie bowls seems to deeply satisfy my inner child's need to eat bright pink things. Like how I fantasized about melted magenta crayons being edible. BUT NOW IT'S REAL LIFE.

This smoothie bowl is dope. Banana + dragonfruit + raspberry + cashew butter + dates. It sweet, just a little bit tangy and lusciously creamy.

I like to blend it with about 3/4 cups water to get an ice cream consistency. Then I pile it with macadamia nuts, cacao nibs, hemp hearts, buckinis, kiwi and lilikoi. In these photos I went with buckinis and chia and more dragonfruit slices.

I dare you to try it and not fall in love.

I've been eating it for breakfast all weekend! It's addictive.

And the "electric feels" bit? That color is so eye-poppingly juicy that it's actually pretty trippy seeing that color in a food you can eat.

“Electric Feels” Dragon Fruit Smoothie Bowl

A 5 ingredient recipe (not including water) that whips up in a snap! Pre-prep the banana and dragon fruit by slicing and freezing on a parchment lined sheet the night before.

    Ingredients

    • 1 cup frozen banana
    • 1 cup frozen dragon fruit
    • 1/2 cup frozen raspberries
    • 3 medjool dates, pitted
    • 3 tablespoons cashew butter
    • 3/4 cup water
    • optional topping ideas: fresh dragon fruit slices, macadamia nuts, chia, buckinis, cacao nibs, kiwi slices, coconut flakes, hemp hearts

    Instructions

    1. Add everything except for the toppings to your blender cup. Whizz on high, scraping down the sides of the bowl as you need to get everything blended perfectly. Pour or scoop out your smoothie (which should be the consistency of soft-serve ice cream) into a bowl. Top with your favorite super foods and fruit! Voila!
