My friend gave me an aloe plant the other day. Which is great because my coffee plant needed a buddy. I feel like my fondness for my plants amounts almost to pet status. At least goldfish status. In my mind I think to myself "if I don't kill these plants, maybe I can have  kid someday and not ruin it?!?!" No, Renee, that doesn't make any sense. There's a big difference between plants and children. (I wish taking care of kids was as easy as taking care of plants.) You know when you're hungry in the middle of the day and everything in your house -- or in the fridge at work -- requires assembly for to be tasty? You're looking at your pantry and saying to yourself "chickpeas straight out of a can doesn't sound so bad…." or "What if I eat raw peppers with salad dressing... that doesn't suck, does it?" or "Dry cereal? I could go with that." I get so hungry in the middle of the day, open all of my cabinets and my fridge 10 times, pace around...  and then I remember that smoothies exist and they're fast and you don't even have to plan. Because frozen banana + 1 other fruit + super foods + water = lunch… er, smoothie. Whatever. Smoothies don't take much in the way of skill to execute. Which is one of the best things about them. You can be frazzled hungry and convincing yourself that crackers with barbecue sauce probably has some nutritional value (NO). But a smoothie will solve that problem. +100 HP if life was a video game. Or "refresh potion" or something like that. IDK I played pokemon on gameboy once and now I think I know things.

So I guess this makes this both a lazy smoothie and an emergency energy re-up smoothie. If you like lots of fruit, this would be great with strawberries, mango, or pineapple added in as well (add 1/4 cup of any of those). You could add coconut milk to make it super creamy and almost any superfood melds well (except spirulina). I suggest lucuma, maca, cacao nibs, and goji.

Speaking of superfoods, here's a bit about the nutrition in this smoothie: blueberries are antioxidant rich; cashews are chock full of potassium, good fats, and protein; bee pollen has every amino acid necessary for human life i.e. it's protein rich and also a good source of B-complex and folic acid; hemp is high in protein and good source of Omega-3 fatty acids; and dates, although high in sugar, are another good source of potassium.

Lazy Lady Blueberry Cashew Smoothie

 

Ingredients

  • 1 cup frozen banana, chopped into 2 inch pieces
  • 1 cup frozen (or fresh) blueberries
  • ¼ cup "raw" cashews
  • 2 tablespoons hemp hearts
  • 1 teaspoon local bee pollen
  • 1 medjool date, pitted
  • filtered water

Instructions

  1. Add bananas, blueberries, cashew, hemp hearts, bee pollen, and date to your blender cup. Pour in enough water to almost cover the ingredients (this makes it ice-cream-thick, if you want it thinner pour in enough water to cover the ingredients fully). Blend until creamy and as close to a uniform texture as you can get it. If you're using a Vitamix (lucky you!!!) the cashews will go smooth and everything will come out perfectly even. Otherwise, you may have a little bit of texture from the cashews as they're unslaked. Who cares? This is a lazy smoothie. Drink up!
